Ingredients: For this recipe, you are going to need about 3 cups of red potatoes that are chopped into 1 inch cubes; ¼ cup of chopped celery; ¼ cup of chopped red onions; 1/3 cup of light mayonnaise; ½ of pickled dill that is finely chopped; ½ teaspoon of garlic powder, 1 teaspoon of dill; 2 tablespoons of brown mustard; salt; and pepper.

How to prepare: The first thing you have to do is to boil the potatoes for 10 minutes until the insides are soft. Then drain the boiling water and let the potatoes cool off by soaking it into an ice bath. Combine the rest of the ingredients in a separate bowl to form the dressing of the salad. Chopped the cooled potatoes and mixed it in the dressing and refrigerate until it is ready to serve.

2. Fried zucchini spaghetti – A delightful Italian staple with a refreshing twist of zucchini. A perfect comfort food for the summer season.

Ingredients: 1 pound of spaghetti pasta; 3 zucchinis sliced slanted into 1/4’” thick rounds; 1 teaspoon of unbleached all purpose flour; ¼ cup of high quality virgin olive oil; ¼ cup of pasta water; 1/3 cup of freshly chopped basil; 1 cup of finely grated parmesan cheese; kosher salt; freshly ground black pepper.

How to prepare:

A. Cook the spaghetti in heavily salted water until al dente then toss the zucchini slices into a bowl of flour. Heat the virgin olive oil in a non-stick pan and fry the zucchini slices until browned and crispy. Remove the cooked zucchini slices and dash a small amount of kosher salt to taste.

B. Add the remaining olive oil with the parmesan cheese and mixed them together until it reaches as creamy consistency. Then add the pasta water to extend the creamy texture of the sauce.

C. Prepare the spaghetti on a plate, pour the creamy sauce and place the fried zucchinis on top, sprinkle with ground black pepper and chopped basil then serve.

3. Baked asparagus in a paper bag – A one of a kind summer recipe that doesn’t get any easier to prepare.

Ingredients: 2 bundles of trimmed asparagus; 4 cloves of garlic (minced); 3 tablespoons of extra virgin olive oil; 2 bay leaves, ½ slice of lemon (further sliced into thin portions); paper bag; salt and pepper to taste.

How to prepare: Combine the asparagus, garlic, olive oil, a pinch of salt, and pepper. Toss everything until all the ingredients have coated the asparagus evenly. Get the paper bag and place everything inside then add the sliced lemons and bay leaves. Fold the paper bag and coat the outside of the bag with canola oil to prevent the bag from burning. Lay the bag on the cookie tray and bake it for 30 minutes. Remove the asparagus out of the bag, discard the bay leaves and serve.

4. Fresh green bean and tomato salad – A gorgeous looking salad that is made from freshly picked ingredients from the garden. A perfect recipe for summer parties that you can really enjoy eating.

Ingredients: 1 pound of green beans; 3 medium red plum tomatoes; ½ red onion (diced); 2 tablespoons of virgin olive oil; ½ cup of freshly squeezed lemon juice; 2 tablespoons of red wine vinegar; salt and pepper to taste.

How to prepare: Chop the tomatoes into 1 inch segments and whisk them together with the olive oil, salt, and pepper. Snap the stem end of the beans and steam for 6 minutes then rinse in ice water to stop the cooking process on the inside. Slice the beans into 1 ½ inch sections. In a large bowl, add the whisked tomatoes as well as the beans and make a dressing using the remaining ingredients. Adjust the acidity levels of the dressing until you reach the desired taste. Add a dash of fresh pepper and enjoy.

5. The veggie box kale with pasta, chicken, and bacon – A terrific everyday food that can also be enjoyed in the summer months.  It is a great combination of healthy foods and delicious meat to appease your appetite.

Ingredients: 2 chicken breast cut into bite size pieces; 2 large strips of turkey bacon cut into small pieces; 3 tablespoon of olive oil; 2 cloves of garlic (chopped); a bunch of kale with the stems removed; 2 cups chicken broth; ¾ pack of whole wheat linguini; ½ cup of grated fontina cheese; salt and pepper to taste.

How to prepare: Cook the bacon until crispy them remove the remaining grease using paper towel. Pour olive oil into the pan to cook the chicken. Add a pinch of salt and pepper to the chicken and cook until done. Boil the pasta until cooked then drain to cool off the linguini. Set aside. Cook the kale using the chicken broth and add garlic for flavoring. Cook until the kale is soft and the liquid is reduced. Put bak the pasta then add the fontina cheese and mix altogether. Add the sliced bacon and chicken and divide evenly into 4 plates.
