Garlic Herb Marinade
Makes approximately 1 cup
Use this marinade to flavor vegetables, fish or pasture-raised meats before grilling.
Ingredients
6 garlic cloves, peeled and sliced
1 bunch mint leaves washed, picked and chopped
1/2 cup olive oil
1/2 cup freshly squeezed lemon juice
salt and freshly ground black pepper, to taste
Method
Combine all ingredients in a small bowl. Use to marinate vegetables for 15 minutes before grilling. Use to marinate fish and chicken for 30 minutes before grilling.
Herb Zest
Makes approximately 3/4 cup
Use this herb zest to add flavor and zip to green salads, roasted potatoes and steamed vegetables.
Ingredients
zest of 3 organic lemons
1 bunch flat leaf parsley, leaves picked, washed and finely chopped
2-3 cloves garlic, minced
1 teaspoon capers, drained and minced
freshly ground black pepper, to taste
Method
Combine all ingredients in a small bowl. Taste and season with plenty of black pepper.
Herb Pesto
Makes approximately 1 1/2 cups
Stir fresh herb pesto into pasta, rice and grain salads as well as mashed potatoes, or use as a spread on sandwiches.
Ingredients
3 cloves garlic, peeled
1/4 cup pine nuts
1/4 cup grated Parmesan
2 bunches flat leaf parsley
2 bunches chives, washed and cut into 1-inch lengths
1/4 cup olive oil, as needed
salt and freshly ground pepper, to taste
Method
Place garlic cloves, pine nuts, Parmesan and herbs in the food process and pulse until a chunky paste forms. Drizzle in the olive oil as needed. Season to taste with salt and pepper.
Dip the tomato in boiling water and remove the skin. Grate the flesh into the salsa, or chop very finely and then add it. Stir well to combine all the ingredients.
