Photo: Caramelized Onion, Prune and Feta Triangles

Makes 25-30 triangles

Ingredients
1-1/2 tablespoons olive oil
5 yellow onions, sliced into thin strips
1 teaspoon red pepper flakes
1 tablespoon dried thyme
1/4 teaspoon salt
8 prunes, sliced lengthwise
1/3 cup pitted kalamata olives, sliced lengthwise
5 ounces feta cheese
10 sheets phyllo
butter to brush phyllo

Method
Preheat oven to 375F.

Heat oil in a heavy bottomed pot over medium heat. Add the onions, salt, thyme and red pepper flakes and stir to combine. Cover and cook for 15 minutes, or until onions have wilted.

Remove cover and cook, stirring frequently, until onions are caramelized, approximately 30 minutes.

Add sliced olives and prunes and cook for an additional 5 minutes. Remove to a bowl and allow to cool.

Once the mixture has cooled, stir in the feta cheese. Taste and adjust seasonings.

Lay out a sheet of phyllo, brush with butter and cut into 3 pieces lengthwise. Place 1 tablespoon of filling onto the bottom edge of one piece of phyllo and fold the filling up like you're folding a flag. Repeat with the other 2 pieces of phyllo. Place the triangles on a cookie sheet lined with parchment paper. Repeat until all the filling is used.

Bake for 20 minutes and serve immediately.

Triangles can be frozen for up to 3 weeks and then baked from frozen in a 375F oven for 30 minutes or until golden brown.
